Summer Kale Salad

Ingredients

1/4 cup lemon juice
1 teaspoon chopped fresh oregan
1/4 cup olive oil
1 teaspoon minced spring onion
1/2 teaspoon mustard
2 large bunches of kale
1/4 cup halved cherry tomatoes
1/2 cup chopped walnuts

Directions

1. Whisk together the lemon juice, oregeno, olive oil, spring onions and mustard until combined
2. To assemble, lightly toss with the dressing and then serve with cherry tomatoes and walnuts on top.
